Yakult Mousse Cake

Ingredients

  • 2 bottles of Yakult
  • 30g melted unsalted butter
  • 60g graham crackers
  • 33 ml water
  • 11g gelatin powder
  • 130 ml heavy cream
  • 130 ml yogurt
  • 30g sugar

How to make it

Step1
Prepare the crust by crushing the graham crackers. They do not need to be crushed into a fine powder.
Step2
Mix the crushed crackers with the melted butter and press the mixture into a 6 oz round pan. Freeze for 20 minutes.
Step3
In a bowl, beat the heavy cream and sugar with an electric mixer until soft peaks form. Let it rest in the refrigerator.
Step4
In another bowl, combine the gelatin powder and water. Add 1 bottle of Yakult and mix until the gelatin is completely dissolved.
Step5
In a separate bowl, mix the yogurt with the remaining bottle of Yakult. Add the gelatin mixture and stir to combine.
Step6
Take the whipped cream out of the refrigerator and fold it into the yogurt mixture until fully combined.
Step7
Remove the crust from the freezer and pour the mixture into the pan, smoothing the surface.
Step8
Refrigerate overnight, or freeze for at least 2 hours and 30 minutes before slicing.
Step9
Slice and garnish with lemon zest.
