Ingredients
- 2 bottles of Yakult
- 30g melted unsalted butter
- 60g graham crackers
- 33 ml water
- 11g gelatin powder
- 130 ml heavy cream
- 130 ml yogurt
- 30g sugar
How to make it
- Step1
- Prepare the crust by crushing the graham crackers. They do not need to be crushed into a fine powder.
- Step2
- Mix the crushed crackers with the melted butter and press the mixture into a 6 oz round pan. Freeze for 20 minutes.
- Step3
- In a bowl, beat the heavy cream and sugar with an electric mixer until soft peaks form. Let it rest in the refrigerator.
- Step4
- In another bowl, combine the gelatin powder and water. Add 1 bottle of Yakult and mix until the gelatin is completely dissolved.
- Step5
- In a separate bowl, mix the yogurt with the remaining bottle of Yakult. Add the gelatin mixture and stir to combine.
- Step6
- Take the whipped cream out of the refrigerator and fold it into the yogurt mixture until fully combined.
- Step7
- Remove the crust from the freezer and pour the mixture into the pan, smoothing the surface.
- Step8
- Refrigerate overnight, or freeze for at least 2 hours and 30 minutes before slicing.
- Step9
- Slice and garnish with lemon zest.
